What sort of school project is this ??
Depending on your intentions and how bad it be: malicious wounding, assault with a bladed weapon, assault cause grievous bodily harm or attempted murder. In the US you'd be charged with adjectives of them.
It may depend on where you stabbed them...the highest point you could be charged with would be Attempted Murder (section 239 of the Criminal Code of Canada

"239. Every person who attempts by any money to commit murder is guilty of an indictable offence and liable
(a) where a firearm is used contained by the commission of the offence, to imprisonment for go and to a minimum punishment of imprisonment for a term of four years; and
(b) surrounded by any other case, to imprisonment for go."

lower things may be Aggravated Assault (section 268) or Assault With a Weapon or Causing Bodily Harm (section 267), Source(s): http://www.statcan.gc.ca/pub/85-570-x/20…
